Sometimes you just need to bake something with cheese, right? So I just made up a simple casserole last night.
It’s so simple. Grab what you have, throw it in a pan, cook it, douse it with vegetable stock and tomato paste, season the sh*t out of it, pour into baking dish, throw the goodness called cheese on it, and off it goes into the oven. BAM! Done.
1 Tbsp olive oil
250 g ground meat (I had pork)
1/2 Zucchini, chopped
1 carrot, chopped
1 red onion, diced
Seasoning (salt, pepper, garlic, italian herbs)
300 mL vegetable stock
2 Tbsp tomato paste
3 Tbsp fat reduced creme fraiche
Enough Emmental cheese to cover it all
I had it in the (gas) oven for 20 minutes at 200 °C.
