Is it obvious that I like sweet potatoes? They are such a great source of good carbs and delicious at the same time. And don’t get me started on how versatile they are.
I’ve been to Mexico recently and so I was struck with a bit of wanderlust again when Goodful shared this recipe.
All you need is to follow the instructions in the video, but again I made some adjustments regarding the measurements.
1 sweet potato
1 small red onion
1 yellow bell pepper instead of 3 halves
It’s a very good recipe, but plan to use the removed potato parts for another meal (maybe this one? 😉 ), otherwise it’s a waste of good food.
