There must be a universe of patties somewhere out there. There are just so many possibilites! And this might be a yet more or less undiscovered one.
For 1-2 servings you need:
- 200 g beetroot
- 1 small shallot
- 1 tbsp whole grain flour
- 1 tbsp farina
- 2 tbsp lemon juice
- 1/2 egg
- 50 mL cream
- 35 g plain yogurt
- 1 tsp grated horseradish
- Grate the beetroot, dice the shallot, and mix everything except for the egg and 1 tbsp lemon juice. Season the dough to taste and then add the egg
- whisk the cream until thick. Mix yogurt with the horseradish and remaining lemon juice, add sweetener if necessary. Season with salt and pepper.
- Form patties with the beetroot dough and roast them until slightly brown
- Serve with horseradish cream and enjoy!
