There must be a universe of patties somewhere out there. There are just so many possibilites! And this might be a yet more or less undiscovered one.

For 1-2 servings you need:

  • 200 g beetroot
  • 1 small shallot
  • 1 tbsp whole grain flour
  • 1 tbsp farina
  • 2 tbsp lemon juice
  • 1/2 egg
  • 50 mL cream
  • 35 g plain yogurt
  • 1 tsp grated horseradish
  1. Grate the beetroot, dice the shallot, and mix everything except for the egg and 1 tbsp lemon juice. Season the dough to taste and then add the egg
  2. whisk the cream until thick. Mix yogurt with the horseradish and remaining lemon juice, add sweetener if necessary. Season with salt and pepper.
  3. Form patties with the beetroot dough and roast them until slightly brown
  4. Serve with horseradish cream and enjoy!
