Besides sweet potatoes I’m also a big fan of lentils. So here you have an easy way to eat lentils in a different way than usual.

For 1 serving you need

  • 1 shallot or small onion
  • 1 tbsp olive oil
  • 80-100 g red lentils
  • 150 mL vegetable stock
  • salt, pepper, lemon zests
  1. dice the shallot and stew them in a pot with the oil until they become glassy
  2. add the lentils and 120 mL of the veggie stock, let it cook at medium heat until all the water is soaked up
  3. Blend everything with the remaining stock and then season it to taste
