Now this is a real allround recipe for any time of day you like. Call it omelette, tortilla, or frittata, it won’t change anything about its deliciousness!

For 1 serving you need:

  • 120 g zucchini
  • 1 small onion
  • 1 small garlic clove
  • 50 g ham or some dried tomatoes for a vegetarian alternative
  • 1.5 tbsp olive oil
  • 2 eggs
  • salt, pepper, oregano
  1. Dice everything (apart from the eggs of course) and cook it with the oil in a small pan for about 5 minutes
  2. whisk eggs in a bowl, season with salt and pepper. Add zucchini mix to the bowl and add the oregano
  3. give everything back into the pan and let it thicken for 5 minutes
  4. try to flip the frittata with the help of a plate, and let it cook again for a few minutes
