After all these main courses, it’s time for a health in between snack, right? Clean and low carb muffins are one of my many dreams and fav treats.

For 12 muffins you need:

  • 200 g ground almonds
  • 30 g ground flax seeds
  • 1 ripe banana
  • 2 eggs
  • 120 mL milk
  • 60 mL oil
  • sweetener to taste
  • 1 tbsp baking powder
  • 40 g natural cacao nibs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  1. Preheat oven to 180 °C.
  2. Mix the banana, eggs, almond milk and oil with a blender.
  3. Add the ground almonds, ground flaxseed, sweetener, baking powder and spices. Blend thoroughly.
  4. Lastly, stir in the cacao nibs (or chopped dark chocolate)
  5. Fill into a muffin tin lined with paper cups.
  6. Bake at 180 °C 25-30 minutes or until browned on top. You can also test with a cocktail stick or a knife – if they come out dry, the muffins are done.
